I decided to create the Easy Chicken Cacciatore with the Progresso™ Recipe Starters™ Fire Roasted Tomato. Not only was it so easy to make, my family loved it too.
Easy Chicken Cacciatore
Prep Time: 10 min.
Total Time: 35 min.
Servings: 4
Ingredients
8oz uncooked spaghetti
1 package (20 oz) boneless skinless chicken thighs - (I used chicken breasts)
1 package (8 oz) sliced fresh mushrooms (3 cups) - (I omitted)
2 cloves garlic, finely chopped
1 can (18 oz) Progresso™ Recipe Starters™ fire roasted tomato cooking sauce
1/4cup chopped fresh basil leaves or 2 teaspoons dried basil leaves
Directions
1. Cook and drain spaghetti as directed on package.
2. In 10-inch nonstick skillet, heat 1 tablespoon vegetable oil over medium-high heat. Add chicken thighs; sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper. Cook chicken 3 to 4 minutes on each side.
3. Remove chicken from pan; set aside. Reduce heat to medium.
4. In same skillet, add mushrooms and garlic. Cover and cook about 5 minutes or until vegetables are tender. 5. Return chicken to skillet; pour cooking sauce over chicken. Sprinkle with basil; simmer about 10 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F). Serve over spaghetti.
It turned out great even when using chicken breasts instead of thighs and omitting the mushrooms (we are not mushroom people), and the kids really loved it! The flavor was perfect, and had a restaurant quality to it. Being able to create such an amazing meal with items I already had in my home in such a short time, was just amazing. We will for sure make this dish again in the near future, and are looking forward to trying even more of the Progresso™ Recipe Starters™ and recipes.
